
New Recipe: Mexican Five Bean Wrap
A lot of people have been asking about simple lunch time ideas and the Mexican Five Bean Wrap certainly fits the bill.
We all find it to easy to dash down the shops and grab a sandwich when we’re hungry and haven’t had time to prepare anything. And sometimes it’s just not possible to track down a microwave or make a salad.
So this is a quick lunch time idea that is a fabulous sandwich replacement. It contains beans which are really filling so will hopefully keep you fuller for longer than your average sandwich.
Top tip: A typical 400g can of mixed beans is approximately 230g when drained. So one tin can be used over 3 different lunches.

Mexican Five Bean Wrap

Serves 1 • Ready in 3 minutes
1 soft tortilla wrap (125 cals)
80g (3oz) ready-to-eat mixed beans, drained (81 cals)
15g (1/2oz) cheddar, grated (62 cals)
1 tbsp salsa (13 cals)
shredded young leaf spinach (7 cals)
• Rinse and drain the beans. Spread the salsa evenly over the whole wrap. Then add the beans, making sure you leave at least an inch free at the bottom of the wrap to fold over. Arrange your shredded lettuce over the beans and then grate over the cheese as evenly as possible. Fold over the bottom inch of the wrap. Then gently but firmly roll up the wrap.
