
New Recipe: Honeyed Chicken Spaghetti
The courgettes have been multiplying (in my fridge not the garden – I’m no good at gardening!) and on hot days I’m craving simple light recipes that can be made with minimum kitchen time.

I love that in this recipe all the ingredients are lightly cooked and then combined to absorb the flavours in a dish before serving. Perfect for when you want a no fuss weeknight dinner when you’re a bit hot and bothered!
Honeyed Chicken Spaghetti

Serves 1 • Ready in 15 minutes
1 tsp olive oil (27 cals)
1 large courgette, cut into ribbons with a peeler (45 cals)
juice of ½ lemon (4 cals)
1 tsp balsamic vinegar (4 cals)
1 tsp extra virgin olive oil (27 cals)
1 tsp runny honey (23 cals)
salt and freshly ground black pepper
1 tbsp (15g) butter (111 cals)
1 × 150g (5oz) skinless chicken breast, diced (159 cals)
80g (3oz) broccoli, cut into small florets (31 cals)
Begin by preparing your serving dish. It should be wide with a lip and able to hold the chicken, courgette pasta and broccoli comfortably. Put the lemon juice, vinegar, extra virgin olive oil, honey and salt and pepper in the dish and whisk together with a fork. Set aside.
Make thin ribbons of courgette with a vegetable peeler or spiralizer. Blot on kitchen roll. Fry in a wide frying pan with the olive oil for 1-2 minutes. Stir into the lemon juice and vinegar.
Re-use the frying pan from the courgette, adding the butter. When the butter has melted, add the chicken pieces and fry for 10-12 minutes, turning once, until golden and cooked through. As soon as it is cooked, transfer to the serving dish and toss into the dressing.
Meanwhile, bring a pan of water to the boil and plunge in the broccoli. Cook for 6 minutes until tender. Drain and combine with the courgette spaghetti, chicken and dressing.
Leave the dish for 2 minutes before serving to allow the flavours to combine.
