Dreaming of your holidays? This vibrant Greek salad skewer diet recipe will take you there in a flash. #foodstagram #healthychoices #recipeshare
I don’t know about you but my holiday envy is in full swing. Facebook is a continuous scrolling parade of white sand, blue seas and brown legs – and the TV is wall to wall ads for sun cream and razors.
Meanwhile I’m at home, still dieting, still hunting for a miraculous swimsuit and still trying to find the European health cards (if you’ve forgotten to dig yours out, consider this a public service reminder).
Thank goodness, then, for sunshine food like this Greek salad skewer recipe. I’m not sure why spearing all the usual ingredients (tomatoes, feta, peppers, cucumber, red onion) onto a skewer makes them more interesting but it just does. Trust me. Add the herby balsamic dressing and it’s summer eating on a stick.
They couldn’t be easier to make either, so kick back, close your eyes and dream your way to a Greek island.
