Alpen-style Muesli can be knocked up really quickly and is much healthier than your standard muesli. And of course it contains my favourite breakfast ingredient…oats.
I love having this breakfast cereal in the cupboard. I’ve found myself reaching for it in the evening too when I want a healthy-ish snack to fulfill my need for something a little bit sweet. It’s a little bit of healthy comfort food.
You can knock up this muesli in about 2 minutes. I’m not going to lie, I’ve made this one to taste like Alpen. Why? Because I love it and it brings back memories of childhood. Don’t worry it’s nowhere near as sweet as Alpen and is choc full of healthy fruit and seeds.
The muesli is not gluten free as both the oats and spelt contain gluten. Spelt is a form of ancient wheat and contains a different form of gluten to modern wheat. If you are coeliac or gluten sensitive, you may want to avoid this. However, if you are intolerant to the wheat in bread and pasta, then this breakfast cereal should be perfect for you.
Ready in 2 mins • Makes 8x40g servings
200g jumbo porridge oats (748 cals)
1 heaped tbsp (20g) icing sugar (79 cals)
2 heaped tbsp (60g) raisins or sultanas (176 cals)
1 tbsp sesame seeds (63 cals)
1 tbsp pumpkin seeds (59 cals)
50g spelt flakes (171 cals)
• Mix together the oats and icing sugar until all the oats have a fine coating of the powder – this is the trick I find for a alpen-like taste!
• Then add the raisins, sesame seeds, pumpkin seeds and spelt flakes and stir or shake together. Keep in an airtight container. The muesli will keep for up to one month.
